Cake Request

My daughter was very clear when she requested that she wanted a Mermaid under the Sea cake for her 3rd birthday party. The trouble was I had never baked, at least not successfully, in my life!! Necessity is truly the mother of invention because I knew I couldn't disappoint my little girl. I started 4 months before her birthday and did extensive research on the web. I knew I didn't want to pay $200 for a specialty cake..the going rate in our area.

I started my research on google with images of mermaid cakes posted on the web. I then began trying to bake with ready made mixes at first and then from scratch recipes off the internet. Baking the cake and decorating it was definitely easier than icing and assembling it for me. I started with some guidelines for what I wanted out of this cake and they were:

                                        1. The cake had to be visually exciting

                                        2. Have a unique flavor (Vanilla Mango)

                                        3. Be light in texture but taste delicious

                                        4. Not cost a fortune to make

      I am happy to say I met all 4 of my requirements and in my quest discovered 
a wonderfully satisfying hobby :-)
The icing on the cake however was seeing my daughter scream in glee at her dream cake.
